One of my favorite activities about the holidays is baking for my family. This easy rice crispy treat recipe is fast and delicious. It’s like having a Christmas party in your mouth. The secret to this dish is adding a few drops of peppermint essential oil. Over the last year I have developed a huge love for these oils. I use them to prevent colds, to relax and to create a stress-free atmosphere. One of my favorite oils is the DoTerra Peppermint Oil.
I use this peppermint oil to help relieve headaches or an upset stomach. I love to place a few drops into my water or mint recipes for a calming dietary experience. It’s simply perfect for holiday recipes like this one! Just a few drops adds a healthy authentic flavor to the food.
My peppermint bark rice crispy treat recipe is perfect for the holiday season. The best part is that it doesn’t take much time to prepare. As a busy mom of three boys, I don’t always have time to make a fancy Christmas treat. Preparing these treats gets me out of the kitchen and back to the holiday fun. Here is a look at how I prepared the treats.
Step 1: Melt 1 stick of butter into a large sauce pan. Once the butter is melted, add 1 10-oz bag of regular marshmallows.
Step 2: Once the butter and marshmallows have melted evenly, add 3-5 drops of peppermint oil; mix well.
Step 3: Remove from the heat and add 6 cups of rice crispy cereal.
Step 4: Stir constantly until it is well combined and then press the treats into a greased 9×9 baking dish.
Step 5: Melt and drizzle 4-oz of dark chocolate and white chocolate over the cooled crispy treats.

Step 6: Crush two handfuls of unwrapped peppermints in a blender and spread them evenly on top of the treats.
That’s It! Just cut and serve to your friends and family members.
- 1 Stick of Salted Butter
- 1 10-oz Bag of Regular Marshmallows
- 3-5 Drops of Peppermint DoTerra Oil (or 1/2 tsp mint extract)
- 6 C Rice Crispy Cereal
- 4-oz Dark Chocolate
- 4-oz White Chocolate
- 2 Handfuls of Unwrapped Peppermint Candy (crush in a blender)
Directions: Melt the butter in a large non-stick pan. Once the butter is melted, add the bag of marshmallows. Stir continuely until the butter and marshmallows are completely melted and well combined. Add the peppermint oil to the melted marshmallow mix. Remove the pan from the heat and stir in the rice crispy cereal. Stir well until all of the cereal is well coated with the peppermint marshmallow mixture. Press the treats into a 9×9 greased pan and allow them to completely cool. Once the treats have cooled, melt the dark chocolate and drizzle it over the treats. Repeat this step for the white chocolate. Crush the mints in a blender and gently press the pieces into the treats. Cut and serve with holiday love!
