Guess what? I finally figured out how to get my kids to eat vegetables on pizza night! Because of all our extracurricular activities, we are having a pizza night at least once a week. This year is a little crazier than usual because my husband is working out-of-town during the week.
As a geographical single mom I’m typically helping my oldest with his homework while chasing the toddler and the baby before we run off to guitar lessons, soccer practice or cub scouts. Once we return home, the kids are usually starving and I am left with very little time to prep and cook a meal. This is when I grab a Freschetta Naturally Rising Pepperoni Pizza. It’s a big hit when I pair it with my easy garlic & spinach fondue cheese dip.
On these days it makes me extremely grateful to live within minutes of Walmart! It is so easy to stop in and grab a delicious Freschetta frozen pizza, yummy broccoli and cheese for the fondue dip. I love how Walmart conveniently places their frozen foods section at the front of the store. It makes my shopping experience fast and enjoyable. Whenever we bake Freschetta pizza I don’t ever have any left overs! My growing boys always clean their plates. We have eaten many other brands of frozen pizza before but this is our preferred choice. We can literally taste the freshness of the tomato sauce and mozzarella cheese. Now let me show you how I add veggies to pizza night.
Steaming a fresh head of broccoli makes a great side dish and allows me to sneak in veggies on pizza night. The boys love dipping their broccoli in the cheese dip. It’s fun for them and I don’t have to stress about them eating their vegetables.
The naturally rising crust on the pizza is by far my favorite part. The crust is very soft and perfect for dipping which is why I love to serve my fondue cheese dip on family pizza night. This cheese dip is full of flavor and easy to make. The dip is completely ready to be served when the pizzas come out of the oven. Here is how I make the dip.
Step 1: Melt 1 TBS of butter into your fondue pot. Once the butter is melted, add 1 TBS of minced garlic and saute’ until it is fragrant.
Step 2: Add 1/4 C of milk and bring it to a low boil.
Step 3: Add a handful of Mexican Melting Cheese. Once the cheese begins to melt, add a little more. Slowly add the cheese a little at a time until it is all melted. You may need to add a little more milk until it reaches your desired consistency.
Step 4: Add a handful of spinach and stir the cheese until the spinach begins to wilt.
That’s it!! The Garlic & Spinach Fondue Cheese dip is ready to be served with steamed broccoli and Freschetta pizza. I usually steam my broccoli in the microwave because it’s a huge time saver and that’s one less pot that I have to clean haha.
- 1 TBS Butter
- 1 TBS Minced Garlic
- 1/4-1/2 C Milk
- 8 oz chopped Mexican Melting Cheese
- 1 handful of Fresh Spinach Leaves
Melt the butter and saute’ the minced garlic in the fondue pot. Once the garlic is fragrant, add 1/4 C of milk. Stir it constantly until it reaches a low boil. If you are using an electric pot then reduce the heat slightly and add a handful of chopped cheese. When the cheese begins to melt, add more cheese while continuing to stir. Alternate between milk and cheese until you reach your desired consistency and then add a handful of spinach. Stir in the spinach until it wilts.
