I’m kicking off the New Year with a plan on to be more organized and healthy. Starting off each morning with a healthy and nutritious meal like my yummy Post Great Grains Cereal Sweet Potato Breakfast Casserole will ensure that my family and I are well prepared for the day.
Partaking in a veggie loaded pre-made meal in the morning allows me to focus on getting the kids and myself out of the door rather than stressing over what to make for breakfast.
I know that it is important to start off each day with a healthy meal, so I was happy when I found out that Post Great Grains Cereal’s contain 36 grams of whole grain per serving along with 12 vitamins and minerals! This is why I choose to use it for the crunchy topping in my breakfast casserole recipe.
•4 Medium Sweet Potatoes
•1 Stick of Butter
•1/2 C Brown Sugar
•1/4 C Sugar
•1/2 C Canned Cooking Milk
•1/2 tsp Vanilla Flavoring
•1 1/2 C Post Great Grains Crunchy Pecan Cereal
•1 tsp Cinnamon
•1 TBS Honey
Bake four medium sweet potatoes in the oven at 425F for one and a half hours or until they are done. Let the potatoes cool. Peel the potatoes and place them inside the mixer. Mix until they are slightly mashed and then add six tablespoons of softened butter. Cream the potatoes and butter for a few seconds then add the sugars, eggs, vanilla and milk. Be sure not to over mix it. You want the potatoes to be mashed and soft, not whipped and smooth. Place the potato mixture into a 9×9 ungreased pan and set it aside. Pour the cereal into a separate bowl. Pour two tablespoons of melted butter over the cereal and gently stir it together. Add one heaping teaspoon of cinnamon while continuing stir the butter and cereal. Sprinkle the cereal mixture over the sweet potatoes and drizzle the honey on top. Bake it at 350F for 20 minutes or until it is done. Serve and enjoy!
